The most expensive coffee in the world does not hail from Jamaica or Hawaii, but instead from Indonesia.

Kopi Luwak the most expensive coffee in the world does exist, and those who drink the expensive coffee insist that it is made from coffee beans eaten, partly digested and then excreted by the Common palm civet, a weasel-like animal.

“Kopi” the Indonesian word for coffee along with “luwak” is local name of this animal which eats the raw red coffee beans. The civet digests the soft outer part of the coffee cherry, but does not digest the inner beans and excretes them.

Apparently the internal digestion ends up adds a unique flavor to the beans, removing the bitter flavor, and then beans are then picked up by locals and sold. Kopi Luwak adalah kopi yang telah dipilih dan dimakan oleh luwak (Paradoxorus hermaproditus) atau dikenal juga sebagai luak, musang dan rase pada beberapa daerah. Luwak memilih buah kopi yang mempunyai tingkat kematangan yang optimum berdasarkan rasa dan aroma serta memakannya dengan mengupas kulit luarnya dengan mulut, lalu menelan lendir serta bijinya.

Prof. Massiomo Marcone dari Guelpg University, Kanada, menyebutkan fermentasi pada pencernaan luwak ini meningkatkan kualitas kopi karena selain barada pada suhu fermentasi optimal 24 - 260 Celcius juga dibantu dengan enzim dan bakteri yang ada pada pencernaan luwak. Kandungan protein kopi luwak lebih rendah ketimbang kopi biasa karena perombakan protein melalui fermentasi lebih optimal. Protein ini berperan sebagai pembentuk rasa pahit pada kopi saat disangrai sehingga kopi luwak tidak sepahit kopi biasa karena kandungan proteinnya rendah. Komponen yang menguap pun berbeda antara kopi luwak dan kopi biasa. Terbukti aroma dan citarasa kopi luwak sangat khas. Proses fermentasi tak lazim oleh luwak ini membuat sebagian orang enggan mengkonsumsinya karena jijik atau takut. Padahal menurut Massimo, kandungan bakteri pada kopi luwak yang telah dioven lebih rendah daripada kopi dengan proses biasa.

Kopi Luwak Anyone for a crappucino?

So, first we eat fish eggs and call it caviar, then we eat snails and call it escargot and now theres cat crap coffee and we name it exotically, Kopi Luwak. Does a rose by any other name still smell (taste!?!) as sweet? What I want to know is who the heck tried this first??? My cat eats onions, but Im not going to eat her crap to see if it has an onion nuance (well, not that Id tell you anyway). Did I mention Kopi Luwak is about $300-$600 a pound and in an upscale restaurant you can expect to pay $50 a cup!

Ok, so this urban legend really has some truth. People pay big bucks for Kopi Luwak coffee beans that are eaten and digested by a three to ten pound palm civet, or Luwak cat, then excreted and the digestive enzymes add a unique flavor to the beans (I bet). The flavor is described as: earthy, musty, syrupy, smooth with rich, jungle undertones. The bean itself is said to be harder, darker and more brittle than the regular coffee beans without the fecal matter. The digestive process is said to cut some of the proteins resulting in a lower acidic coffee. On a clean note… the beans are washed before sold, so bacteria is minimal.

You may think this is gross, but if you eat honey it goes through a similar process, as does argan oil. 'Honey' sounds a lot nicer than bee vomit, I think … but think about it next time someone calls you honey. Are they being derogatory or, I hate to say it…sweet?

The palm civet (paradoxurus hermaphroditus) & luwak cats come from Ethiopia & Indonesia and use scent to eat the ripest and freshest coffee beans. The Indonesian Coffee Exporters Associations says the reason for the high cost is only about 1000 kgs of it is harvested a year.

There is also a little-known coffee which is called Weasel Coffee… I like to serve it to a bad date… muhahhahha.

It is along the same lines as Kopi Luwak except the beans are fed to weasels and they barf it up. Allegedly, it has a stronger taste than the cat crap coffee, but the weasel vomitus has a more chocolatey taste. It hails from Vietnam and costs just over ½ the price of Kopi Luwak.
